Brian's Bircher Müsli
Today was a tough day and I was close to chucking it all in, once again. I have been here many, many times before. One of the triggers was work, I am trying to finish my latest eCourse and am feeling rather overwhelmed because there is still a lot to do before the launch deadline.
When I get this overwhelmed I try to get back to basics and in this case that meant doing some food prep on Sunday so that I have easy access to healthy meals during the busy week ahead. One of the things I prepared was my breakfast. I first came across this recipe by Brian Ferry in 2010 and amazingly it’s still on his blog, you can see it here! I’ve been calling it Brian’s Müsli every since. I am not a big fan of raisins or milk so I adapted it a bit to my needs. This keeps in the fridge for up to a week, I usually divide it into five portions and love having my breakfast all prepared Monday- Friday!
Brian’s Bircher Müsli (adapted)
Makes 5 portions, 345 cals each
1.5 cups rolled oats
1/2 cup toasted almonds slivers
1/4 cup chopped walnuts
1/2 cup dried cranberries
3 chopped dates
2 grated apples
1/4 cup organic sugar
1 cup almond milk
Mix everything thoroughly in a big bowl and store in fridge. Enjoy!
