German pancakes: quick, easy and delicious・The Reluctant Cook

German pancakes are one of my go-to meals on this journey. They are quick and easy to make, versatile with their toppings and simply delicious and filling. Since people often ask me for the recipe when they see my photos on Instagram I thought I’d share it here.

German Pancakes


2 eggs
2 tbsp all purpose flour
2 tbsp full-fat milk or water
Pinch of salt


  1. Combine all ingredients and whisk well

  2. Melt a bit of butter in a shallow pan over low to medium heat

  3. Pour in pancake batter

  4. (If your adding spinach, add it now)

  5. Let sit for a bit until batter solid enough to turn over

  6. Turn over and let sit for a bit

  7. Turn over a couple more times until pancake is golden brown

Serve with:

  • Spinach, ham and feta

  • Ham and cheese

  • Spinach, mushrooms and bacon

  • Lettuce, shrimp and mayo

  • Maple syrup

  • Sprinkle with sugar (that’s how I often had it as a kid, loved it!)

  • Anything you like!
